Lentil, lens culinaris, is a bushy edible plant with an annual life cycle. It has an average height of 40 cm and its branches are very long and ascending and generally have about six pairs of oblong and alternating leaflets that unravel from the base to the top like many small wings. Growing lentils is quite simple as they don’t require excessive care, but they do have specific needs that need to be met. First of all, you need to find a place that receives full sun and be careful not to plant lentils where other legumes have previously grown. It is strongly not recommended to plant them near garlic or onion, while there are no contraindications if they are inserted between potatoes or cucumbers. The seedling deriving from the seed placed to germinate indoors towards the end of winter in a dry place and at a constant temperature of 20 degrees centigrade must be inserted directly into the soil. At that point the sprout can be brought outside and inserted into the ground to a depth of two or three cm, making rows about 10 cm apart.

Lentils need fertile soil to thrive, so it’s good to work the land with mature compost before planting them and make sure it’s well drained and with a slightly alkaline pH. The soil, moreover, must always be quite moist, since even if the lentil plantit does not suffer particularly from drought, the aspect could be not very luxuriant. Once the pods begin to dry, however, it is absolutely necessary to suspend watering. Aside from these little tweaks, there aren’t many other recommendations. A good practice could be to provide support to the plant, once it has grown, by making a trellis that can support it, so as not to fall heavily on neighboring plants. Few people know that lentils are a very ancient plant. There are even testimonies dating back to the Bronze Age that place this plant in Switzerland. But the most interesting hints on this legume are certainly those present in the Old Testament, where it is said that Esau gave his first son to Jacob in exchange for a dish of stewed lentils. In Shiite religious texts it is said that lentils were blessed by all the prophets, including Jesus and Mohammed. The mention of lentils in sacred texts is not accidental. In fact, thanks to their perfectly circular shape, they represented the symbol of the eternal union of death and rebirth and for this reason they were used as comfort food after a bereavement and were served during funeral vigils. From this belief also originates the typically Italian and Hungarian custom of consuming lentils between the old and the new year as a wish for a prosperous future. Regardless of historical significance, lentils are a dish with a great nutritional value. In fact, they contain a high level of essential proteins as well as fibers, minerals, folic acid, iron, sodium and magnesium.
